Sourcing
Our cattle are Angus and Hereford based, bred, and raised to provide meat that is robust in beef flavor and tenderness. The all-natural feeding process of rich pasture grass, high protein hay, and our custom blend of corn, barley, and feed protein contributes to the tenderness and flavor of the meat and the marbling.
Aging
After the harvesting of the cattle, the meat is dry-aged for 10-14 days. The dry-age process improves the tenderness and flavor of the meat, before packaging. Consumer retail beef is harvested, cut, packed, wrapped, and aged in the packaging while in the distribution process to the retailer's meat case. This is a wet aging process.
Customization
Every order is custom-cut, packed, and freezer-wrapped for storage. We inspect each beef during dry aging to identify marbling, fat cover, and meat formation as a result of the all-natural growth and feeding process. This information is used to evaluate and improve our process to provide the highest quality and value for our customers. We maintain detailed records of every head of cattle we raise, from date of birth through delivery to our customer. This ensures the quality, safety, and health of our cattle for our customers.
